It allows for air circulation around the meat so it cooks evenly rather than letting the bottom of the meat stew in its own juices. Roasting is the most common cooking method for large cuts of meat or a whole chicken. Put the meat in a pan and place it in the oven until it’s cooked. Sounds easy, right?
