COFFEE THAT STANDS OUT

A conversation with barista Oskar Garberg on coffee, craft and the new café at our flagship store at Birger Jarlsgatan 28.

Oskar Garberg at Standout Coffee is one of Sweden's most decorated baristas, and has been part of the Singular world since the early days – first through our coffee range, then through a series of guest appearances in our previous stores. At Birger Jarlsgatan 28, Standout Coffee finds a permanent home with us, running the popular café in the store. The café is open for everyone, and offers coffee, pastries and a pantry selection at member prices for Singular members, and regular prices for non-members. This means you can get a world-class cappuccino for 25 SEK.

Oskar, tell us about the café at Birger Jarlsgatan 28, what have you experienced so far?

”Since opening in May, the response has been really positive. What I have enjoyed most is seeing people come back, often several times a week. It means the café is becoming part of people's routine, which is exactly what coffee should be at its best. We have our showroom in Frihamnen, but this is something completely different, and it gives us the chance to serve Standout Coffee in a more daily, accessible way while still keeping the same standards we have always had.”

The Singular model means members get half price on all coffees. How does that affect the menu?

”For us, that opens up something exciting. We can put better coffee on the menu without making it feel complicated or too precious. A cappuccino, an espresso or a filter coffee can be made with coffees we would normally treat as very special, but still be part of someone's everyday routine. The idea is simple: members should be able to drink better coffee more often, at a better value.”

Give us a short walkthrough of the menu.

”We offer a full coffee menu built around the coffees we roast ourselves: espresso, cappuccino, flat white, competition style coffee and filter coffee. These are the drinks people return to every day, so for us they have to be excellent. Then we have iced coffee drinks, which have been very popular, especially during the warmer months. The menu is easy to understand, and every drink is made with care.”

You've always been particular about how coffee is served – the right cup, the right machine, the right moment. What does that look like here?

“Coffee is not only about the liquid in the cup. It is about the whole moment around it, especially when it comes to our competition coffees and the coffee of the week, which we rotate often. At Birger Jarlsgatan 28, we have tried to make everything feel intentional. The machines, the grinders, the cups, the workflow, the way the coffee is presented. It should feel effortless for the guest, but behind the bar there is a lot of thinking.”

What would be your ideal order?

”Probably a clean espresso first, just to taste the coffee properly. Then a cappuccino. It is a great way to experience the coffee with and without milk – the texture, temperature, taste and the tactile experience.”
